    We charge $4.20/LB based on the final hanging weight.

    Hanging Weight: Weight of the meat and bones after the head, skin, feet, and organs have been removed; usually about 60% of the live weight (about 525-675 LBS for a whole). This is the weight that Almost A Cattle Company uses to charge customers and the weight that butcher shops use to calculate the processing fees.

    Custom Processing:

    When you purchase a custom share, you are able to order your cuts just the way you’d like them. The thickness of your steaks, the amount of roasts, how you would like your ground beef packaged; it’s all up to you. You could even have all of the meat made into ground beef if that’s what you prefer.

    You can expect to take home 2/3rds of the hanging weight in processed meat.

    If you like to make your own broth, make sure you ask for bones, soup bones, and the marrow bones.

    $488-$625 (Cut/Wrap fee of $.93 per lb. by the hanging weight)

    *Optional $32.50 per half for maximum available hang time of 14 days.

    Cooler hang time is 9-10 days. It is an option to pay for additional time as some prefer that a longer hang time tenderizes and develops the flavors in the meat (it does shrink a little as some of the water evaporates) Then, the carcass is broken down further, and excess bone, connective tissue and fat is removed.

  • $2,205-$2,835 to Almost A Cattle Company for your Custom Whole Locker beef.

    $630-$765 to the butcher shop to cover the harvest, invoice and cut/wrap processing fees.

    Grand Total estimated investment for your Custom Whole Locker Beef will range between $2,835-$3,600

    The estimated number of pounds of packaged meat that you can look forward to taking home from a whole beef will be a range of 350-450 lbs.

    This will make your final price per pound of packaged meat approximately $8.00 per lb.

    A great way to economically fill your freezer with locally raised ground beef AND premium steaks, cuts plus roasts etc… all cut to your custom specifications.

    *We require a non-refundable deposit of $500.00 to hold your beef. The deposit will be applied to your order total.

  • We recommend 10-14 cubic feet of freezer space for 400-475 pounds of beef. (1 cubic foot per 35-40 pounds of packaged meat)

    This volume may be easier to visualize if you consider that on average, a whole beef will fill 14-18 paper grocery bags. This varies greatly depending on your cut and package size preferences.

    The estimated number of pounds of packaged meat that you can look forward to taking home from a half beef will be a range of 175-225 lbs.

    This will make your final price per pound of packaged meat approximately $8.30 per lb.

    A great way to economically fill your freezer with locally raised ground beef AND premium steaks, cuts plus roasts etc… all cut to your custom specifications.

    *We require a non-refundable deposit of $400.00 to hold your beef. The deposit will be applied to your order total.

  • We recommend 5-7 cubic feet of freezer space for 200-240 pounds of beef. (1 cubic foot per 35-40 pounds of packaged meat)

    This volume may be easier to visualize if you consider that on average, a half beef will fill 7-9 paper grocery bags. This varies greatly depending on your cut and package size preferences.

    Quarter: Approximately 130-170 LBS. X $4.65 = $600-$790

    This amount is paid to us and you will pay the butcher fees separately to the butcher shop when you pick up the meat.

    Farmer’s Choice Processing:

    You can expect to take home 2/3rds of the hanging weight in processed meat.

    In the case of a Quarter Beef purchase…the cuts and package sizes will be predetermined by the farmer and applied to the entire animal.

    The butcher shop will then equally divide all of the packages by their different cuts, ground meat etc… into four equal parts.

    *Note: Custom cuts, package size etc… are not an option for Quarter Beef purchases. If you wish to make a custom order but purchasing 1/2 beef is too much for you, consider sharing a half with a family member or friend.

  • How much do you need?

    Are you looking to make a bulk purchase of beef or pork or maybe some of each?

    Consider a whole, half or a quarter of an Almost A Cattle Company Beef or Pork based on your families’ needs and your ability to store your meat. *Pork is available as a whole or half.

    If you like the idea of choosing custom cuts and package sizes but are worried about making a large volume purchase, consider splitting a half or whole with a family member or a friend.

  • Reserve your beef or pork or both.

    Reserve your Almost A Cattle Company beef or pork by completing the form associated with your selection and make a non-refundable deposit.

    *All deposits go towards the final cost.

  • Choose your custom cuts

    Choose your custom cuts. Almost A Cattle Company reserves Custom processing appointments in advance for their customers. You are able to submit your cut/wrap preferences online and the processor will call you to go over your order to ensure your beef or pork is processed to your specifications.

    Quarter Beef orders receive a standard cut. If you like the idea of custom processing but feel that a half or whole is too much meat, consider finding a friend or family member to split with.

  • Final payment to Almost A Cattle Company

    Final payment is due to Almost A Cattle Company once your beef or pork is delivered to the processor and the final hanging weight is determined.

    This is the weight that Almost A Cattle Company uses to charge customers and the weight that butcher shops use to calculate the processing fee.

    We accept cash, local checks, Venmo, Stripe, Square and Paypal.

  • Pick up your meat and stock your freezer.

    Pick up your beef or pork! The processor will call you when your beef or pork is ready for pick-up and you will pay them directly for harvest fee and for the cut/wrap fees by the hanging weight.

    We will be in touch well in advance of your beef or hog butcher date so that you will have ample time to prep for freezer space etc…

    Trust me when I tell you that you will love the feeling of a freezer full of this tender, delicious and nutritious meat.
